Eggplant Parmesan 1-2 Eggplant 3-4 cups bread crumbs ½ cup grated parmesan 1 egg ¼ cup half & half 1 cup flour 1 can diced tomatoes 2 TBL Tuscan Blend ½ cup basil pesto Sliced provolone cheese
Slice eggplant in rounds. Mix half & half and egg. Dip rounds in flour, then dip in egg wash. Then place in bread mixture of bread crumbs, Tuscan Blend, s & p, and grated parmesan. Pan fry each round in small amount of olive oil for 5 – 7 minutes until browned. Transfer to baking dish, top with spoon of red sauce, dollop of pesto. Top with cheeses and bake until cheese is bubbly.
